Last Christmas in Paris | Rum Glazed Gingerbread Cookies

When you are ready for a lovely, heart-breaking and spirited novel you must pick up Last Christmas in Paris. I thought I didn’t like stories written as a series of letters, however this is the second book I’ve read this year in this style that I absolutely loved. Obviously I just hadn’t found the right books yet! (the first book was Love & Saffron).

Last Christmas in Paris begins as Evie sends off her older brother and his best friend to fight in WWI, the young men promising that the war will be over by Christmas and that they will all meet in Paris to celebrate. The letters between the trio begin light but as the grim realities of war are realized the letters are at times tragic. And yet, Christmas in Paris remains as a source of hope for each of them.

Letters make one uncommonly honest, don’t you think? I’ve told you things in words that I would have been far too shy or distracted to tell you in person.
The ‘Maconochie’ stew you write of sounds awful. Can you put a dash of rum in it to livin it up (or a dash of rum in yourself to numb your taste buds)?

Along with the letters Evie sends to the front she often encloses socks or brandy and once, a Christmas pudding. If I was mailing off Christmas treats to my sweetheart, I would include these soft gingerbread cookies.

With a dash of rum in the glaze you can “livin it up” or “numb your taste buds,” depending on how heavy handed you are with the rum.


Rum Glazed Ginger Cookies

I swapped out the bourbon in the glaze for dark rum. Also I left out the 1 Tbsp of cocoa, as chocolate seems to be a migraine trigger for me, if you include it, your cookies will be a little darker than mine.
