A Court of Thorns and Roses | Feyre’s Lemon Tart

If you haven’t read A Court of Thorns and Roses you’ve probably heard about the series from a book-loving friend who has tried relentlessly to convert you into a fan. And when I say convert, I do mean, join them in the Sarah J. Maas universe and commit to solely partaking in Romantasy books for the rest of your mortal life. 

While I’m not sure I’m ready to jump the wall into Prythian, drink the Faerie wine-koolaid and join the Maas cult, I truly loved the first book in the ACOTAR series and can’t wait to start book two!

I was inspired to make Feyre’s Lemon tart. On the night of Calanmai — Fire Night — Feyre sneaks down to the kitchen for a midnight snack which includes a lemon tart and a cheeky run-in with Tamlin.


Feyre’s Lemon Tart


Ingredients

  • 1 ¼ cup sugar

  • 2 Tbsp lemon zest (approximately 1 lemon)

  • 3 Tbsp cornstarch

  • ½ tsp agar agar powder

  • 1 cup fresh lemon juice (approximately 5 lemons)

  • 1 cup oat milk

  • ¼ tsp ground turmeric (for color)

  • ¼ cup vegan butter

Instructions

In a medium saucepan, mix the lemon zest and sugar, rubbing the zest into the sugar to release the oils. Add the cornstarch, agar agar, lemon juice, milk, and turmeric to the pan and whisk well so there are no lumps, this is especially important for the corn starch and agar agar.

Place the pan over medium low heat. Keep whisking until the curd starts to simmer and thicken. This will take about 5 minutes, whisk well for a smooth curd.

Place the vegan butter in a large bowl, strain the curd over top to remove the zest. Whisk until the butter is fully incorporated into the curd.

Pour the curd into a cooled tart crust. Tap the tart gently on the countertop to pop air bubbles. Let the tart cool down for 1 hour then place in the fridge for at least 4 hours to set, preferably overnight.

Serve with whipped coconut cream if desired.
