The Book Club For Troublesome Women | Rhubarb Apple Betty

I devoured The Book Club for Troublesome Women in just a day, I couldn’t put it down! After being sold the American dream, four housewives living in 1960’s suburbia realize they want more from life. When this unlikely group of women form a book club, they soon discover they aren’t so different as they first imagined. This is a story of sisterhood, self-discovery, empowerment and the life altering potential of books.

In honor of their first book, “Feminine Mystique” by Betty Friedman, the women named their book club “The Bettys.” If I could wrangle myself an invite to The Bettys I would bring this Rhubarb Apple Betty paired with a Sidecar, because you can’t have a book club meetup without dessert and “truth serum” (cocktails).

Thank you @essentiallymeagan for recommending this Apple Betty Recipe!

*The only change I made to the recipe was to swap out a cup of the apples for rhubarb. Ok, I also swapped half the white sugar for brown sugar. I can’t follow a recipe to save my life.
