Murder at the Pumpkin Pageant | Pumpkin Spice Latte Cinnamon Rolls

Murder at the Pumpkin Pageant is a light and easy read. Perfect for those looking for a cozy fall novel. Reminiscent of some of my favorite childhood mysteries, like Nancy Drew, this book was very nostalgic for me. That being said, I did find the book a bit juvenile and had to adjust my expectations to enjoy it. Once I locked into the writing style and stopped comparing it to my current reads, it was ok.

The best part of this book was that it centered around a bakery in the fall. Many scenes take place in a small town bakery with a Pumpkin Spice Latte in hand, which is what inspired these Pumpkin Spice Latte Rolls– AKA Cinnamon buns with a warm spice twist and coffee icing.


PSL Cinnamon Rolls


Cinnamon Rolls

Dough Ingredients

  • 3 plus ¼ to ½ cup flour

  • 3/4 tsp salt (scant)

  • 1 Tbsp white sugar

  • 2 1/4 tsp instant yeast

  • 3/4 cup plant milk warm, not hot

  • 3/4 cup pumpkin puree (100% pumpkin, not pie filling)

  • 4 Tbsp soft vegan butter

Instructions

Combine the 3 cups of flour, salt, white sugar and yeast in a stand mixer. Pour the warm milk and pumpkin into the dry ingredients. Knead with a dough hook until combined. Add 4 tablespoons of softened vegan butter, 1 tablespoon at a time. Knead on low speed for 5 minutes. Add in remaining ¼ to ½ cup flour slowly, if needed. I used ¼ cup plus 2 Tbsp of flour. Dough should be very soft and tacky. The secret to soft rolls is to use a little less flour for a softer dough than you would use for a bread dough. Let rest while you prep the filling.

Filling Ingredients

  • 1/4 cup vegan butter

  • 3/4 cup dark brown sugar

  • 2 tsp pumpkin pie spice

  • 1 tsp cinnamon

Instructions

Combine the filling ingredients in a small bowl. Mix well until fully combined.

Lightly flour your counter. Roll the dough out to a 10x20 inch rectangle.

Spread the filling ingredients on top of the dough. Roll up tightly. Slice into 12 equal rounds. Lightly grease a 9x13 baking pan with butter or line with parchment paper. Place the rolls in the prepared pan.

Cover the baking pan and let it rise in a warm place in your kitchen for about 30 minutes.

Preheat the oven to 350 degrees F. Place the pan with rolls into the oven and bake for 20-25 minutes.

Remove from the oven, let rest 15 minutes before moving to a cooling rack.

COffee Frosting

Ingredients

  • 1/4 cup vegan butter softened

  • 1 ½ cup icing sugar

  • 2 Tbsp strong coffee, cooled

  • Pinch of salt 1 tsp vanilla

instructions

Beat the butter and 1 cup of icing sugar until smooth, add 1 Tbsp of coffee, 1/2 cup icing sugar, salt and vanilla. Beat until smooth, add more coffee or milk to thin as needed or more icing sugar to thicken.

*For the coffee, I mix 1 tsp of decaf instant coffee with 2 Tbsp of hot water and let cool. If your coffee is hot, it may split your icing.

Serve Pumpkin Spice Rolls warm with Coffee Frosting
