Beautiful Ugly | Smoky S’mores Cheesecake
I’m a cautious reader of the thriller genre (I don't know about you but I’ve got enough stress in my life, I don't need much more from my books, thank you very much!) BUT I absolutely loved this book. Beautiful Ugly is a soft thriller that strikes the perfect balance between creepy and suspenseful without being too intense.
Author Grady Green has it all; a bestselling book, dream home, his loyal dog and a supportive and loving wife. His life is so perfect it feels like a dream, that is, until tragedy strikes. His wife has disappeared without a trace.
A year later, Grady is living through the nightmare of losing his wife without closure, he’s so stuck in his suffering that he is unable to write. Grady is grieving and houseless when an opportunity to write on a tiny remote island falls in his lap. With a fresh start and inspiring surroundings, he quickly finds himself writing again, yet he cannot escape his grief when a woman who looks eerily similar to his wife is spotted on the island.
The story is set on a rainy Scottish island and since Grady skipped most meals in favor of scotch, chocolate bars and biscuits, I decided to make a proper dessert of chocolate and biscuits to pair with his drink of choice.
Mini Smoky S’mores Cheesecakes are made with a graham cracker crust, chocolate cheesecake filling and topped with a toasted marshmallow.
Smoky S’mores Cheesecake
I used this Graham Cracker Crust recipe from Sally’s Baking Addiction.
I used this Chocolate Filling recipe and added a dash of scotch for smokiness.
Instructions
Make the graham cracker crust. Press the crust into mini cheesecake molds (makes 24). Bake at 350ºF for about 6-8 minutes or until golden. Cool completely before filling. Make the filling and pour onto the crusts. Place in the freezer for 1 hour or more. Before serving, pop out of the molds and top each cheesecake with half of a marshmallow. Toast the marshmallows with a kitchen torch and serve immediately.
