A Witches Guide to Magical Innkeeping | Cinnamon Rolls with Apple Cider Icing
The only thing better than fall itself is a cozy, cute and magical book. A Witches Guide to Magical Innkeeping checks all of these boxes while giving readers a compelling story. No fluff here, the book is a well paced comfort read with notes of romance, found family, un-breakable spells and quirky characters. 🍂✨👌
Sera is a witch with almost no magical capabilities but she wasn’t always this way. Performing a resurrection spell to bring her aunt back to life has drained nearly all her magic permanently and has her banished from the Guild. Fifteen years after this catastrophic event she is still paying for her crime. Lonely and grumpy, she is running a magical Inn with her Aunt, when she learns about an ancient spell that could give her back her power. Unfortunately, the one handsome person that can help her make sense of the spell has zero interest in getting tangled up in her life.
“Theo and Posey got enormous hugs and extra cinnamon rolls.”
Cinnamon buns seem to be part of the daily menu at Batty Hole Inn. When I finished the book, I was craving a giant gooey cinnamon roll and these buns topped with an apple cider icing came in clutch.
Cinnamon Rolls With Apple Cider Icing
Cinnamon Rolls
Dough Ingredients
4 cups flour
1 Tbsp instant yeast
1 tsp salt
4 tsp white sugar
1 ⅔ c plant milk warm but not hot
¼ cup yogurt, plain or vanilla
5 tbsp soft margarine
Instructions
In a stand mixer, combine flour, salt and white sugar and yeast. Pour the warm milk, yogurt and softened margarine into the dry ingredients, stir with a spoon until it starts to form a shaggy dough then attach the dough hook and knead on low speed for 5 minutes. Let the dough rest for 5 minutes while you make the filling.
Filling Ingredients
6 tbsp vegan margarine, softened
1 c brown sugar
1 Tbsp cinnamon
Instructions
Combine the filling ingredients in a small bowl. Mix well until fully combined.
Flour your counter or a flat surface. Roll the dough out to a 10x20 inch rectangle.
Spread the filling ingredients over the rolled out dough, leaving a ½ inch line bare on one of the 20 inch sides. Starting from the covered 20 inch side, roll tightly, finishing on the bare (without filling) side and pinch the seam together gently.
Cut the roll into 12 equal pieces. Line a 9x12 baking pan with parchment paper. Place the buns in the pan.Cover the baking pan and let it rise in a warm place in your kitchen, 30 minutes or more until doubled in size.
Preheat the oven to 350 degrees F. Place the pan with cinnamon rolls in the oven and bake for 20-25 minutes. They should be slightly golden brown on top with the centers popping out a little.
Remove from the oven, to a cooling rack. Let the rolls rest 15 minutes before lifting the parchment from the pan and continue to cool on a rack.
