The Guncle | Watermelon Salad
“Cute and cutting” would be the caption I would use if I had to sum up The Guncle in just a couple words, fortunately for you, I've got more than that, so let’s go! Patrick, a semi-retired actor with cutting wit and banter to match, temporarily finds himself the sole care-giver to his nephew and niece. The kids, an adorable six year old with a lisp, and his protective older sister, are weathering the loss of a parent. As “Guncle Patrick” and his charges struggle to find a way through their grief, he begins to question if he is the best person to help them.
I wasn’t convinced in the first couple chapters, Patrick’s character felt like a caricature —cartoonish and trying a little too hard. But, as the story carried on I found myself rooting for Patrick and his niece and nephew and by the time I finished the book I was tearing up, smirking at the banter and fully onboard with Patrick’s “Guncle Rules”. I completely agree with this rule! One of my favorite meals to plan (and eat) is brunch. Both savory and sweet dishes are acceptable with an emphasis on indulgence; what more could you want out of a meal? This watermelon salad is a sweet and salty dish that blurs the lines between breakfast and lunch. The herbs and honey-lime dressing bring it together into a light yet flavor-packed salad that's perfect for brunch, lupper and everything in between.
