If you need a day by the lake but can’t get away, then I suggest that you dive into this book for all the lakeside feels. I read the majority of this on a rainy weekend and it was the perfect escape.

This book is a good reminder to take the summer in. When we were kids we soaked up a lazy summer with no guilt attached. That is my goal this year - slow down and just be.

Cake for breakfast sounds great! But if you’re like me, the sugar crash just isn’t worth it. So I set about to create a breakfast cake reminiscent of Charlie’s Chocolate Sour Cream Cake. First I took my Chocolate Sour Cream Muffin recipe and baked it in a cake pan for a heartier, less sweet cake. Then I topped it with a Sour Cream Chocolate Frosting that tastes like pudding. 😋 You can get the recipe in the link in our bio.

Chocolate Sour CreaM Breakfast Cake


Serves: 9

Muffin Cake Batter

  • 1 ¼ cups flour

  • ¼ cup cocoa powder

  • ¾ cup sugar

  • ½ teaspoon salt

  • 2 teaspoons baking powder 

  • ⅓ cup avocado oil (or other neutral oil)

  • 1 egg

  • ⅓ cup milk

  • 1 teaspoon vanilla

  • ½ cup sour cream

  • ½ cup chocolate chips

Instructions

Whisk together flour, cocoa powder, sugar, salt and baking powder in medium bowl.

In another bowl whisk together oil, egg, milk and vanilla. Pour into dry ingredients and stir just until moistened. 

Fold in sour cream and chocolate chips until evenly combined.

Pour batter into an 8x8 pan lined with parchment paper. .

Bake @ 375ºF for 20-25 minutes or until toothpick inserted in centre comes out clean. Let cool completely before frosting.


Chocolate Sour Cream Frosting

  • ¼ cup salted butter, softened to room temp (or unsalted plus pinch of salt)

  • ¼ cup sour cream 

  • 1 teaspoon vanilla

  • ¼ cup cocoa powder

  • 1 cup icing sugar

Instructions

Beat butter and sour cream together until evenly combined. Add remaining ingredients and beat until smooth. Spread over cooled cake.
