A Court of Wings and Ruin | Archeron Sisters’ Ginger Mocha Ice Cream Sandwiches
One of my favourite things about the ACOTAR series is the relationships of the sisters. Although they don’t always get along, there is a deep love between them and they’re always looking out for each other. Even if Nesta needs an attitude adjustment. I’ve never quite understood why she is so cold towards Feyre, when Feyre has always done so much to take care of them. Does anybody else understand this?
In ACOWAR I feel like their relationships with each other really get to shine. They each have their own struggles and fears but ultimately come together when it matters most.
These cookies are a combination of each of the sisters. The ginger cookies represent the spicy fire within Nesta and the boldness with which she lives life. The coffee ice cream signifies Feyre’s coolheadedness and get it done attitude. And the delicate chocolate shell characterises Elaine. Although she is more fragile than her sisters her sweetness and caring bonds them all together. And when the three of them come together they make magic happen - just like these ice cream sandwiches.
I feel like this book wasn’t quite as engaging as the others. Like maybe Feyre had less agency and it felt unnessesarily long to me. What did you think?
Archeron Sisters’ Ginger Mocha Ice Cream Sandwiches
Makes: 15 sandwiches
30 ginger crinkle cookies (recipe below, or use store bought)
2 pints coffee ice cream (store bought is fine)
8 oz semi-sweet or dark baking chocolate
3 tablespoons coconut oil
Let the ice cream soften until scoopable. Place one generous scoop between two cookies and press together. Freeze until firm. (For perfect circles you can spread the ice cream out on a parchment lined baking pan, freeze and then cut with a cookie cutter before placing between the cookies.)
Melt the chocolate and coconut oil together. Place into a bowl that will give the chocolate some depth for dunking. Dip half of the ice cream sandwiches into the chocolate and let the excess drip off. Once it starts to harden you can place it down onto parchment paper. Once they are all dipped, freeze for just a few minutes to harden fully, then enjoy!
Ginger Crinkle Cookies
(makes 56, more than you will need)
1.5 cups butter, softened
2 cups sugar (+ more for coating)
2 eggs
1/2 cup molasses
4 cups flour
4 teaspoons baking soda
1/2 teaspoon salt
4 teaspoons ground ginger
2 teaspoons ground cinnamon
2 teaspoons ground cloves
Instructions
Cream together butter and sugar. Beat in eggs and molasses. Combine dry ingredients and blend into butter mixture. Shape into 1 inch balls. Roll in sugar to coat. Place 2 inches apart on greased baking sheets. Bake at 350ºF for 10-12 minutes until set and crinkly (no obvious browning will appear). Allow to cool several minutes before removing to wire racks or paper towel to cool completely.
